Skillet Chicken and Greens

2 tablespoons olive oil
6 garlic cloves, minced
1 pound organic chicken breast, cut into bite-sized cubes
Black pepper, Celtic sea salt, and red pepper flakes to taste 
1/2 bunch of greens (Lacinato kale or Swiss chard or beet greens), cut into strips

In a large skillet, heat oil on medium heat. Add garlic and cook for 1 minute.
Spread the chicken out in one layer, and season with salt, pepper, and red pepper flakes. Cook for 8-10 minutes. Add the green and cook for 2 more minutes. 
Serve as is or over quinoa or rice.
