Ghee


1 lb unsalted butter (organic), sliced
16 oz  clean mason jar

In a small pot, bring the butter to a simmer (at a low temperature) and cook for 25 - 30 minutes. Be careful that it does not burn. 
The foam on top will settle to the bottom of the pan. You will see some milk solids on the bottom of the pan. 
Let it cool.  Strain and transfer to a mason jar, leaving the settlement in the pan.  Store at room temperature.
