Cinnamon Bread

 

2 cups almond flour

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon aluminum-free baking soda

Pinch of Celtic sea salt

1/3 cup honey or maple syrup 

1/3 cup coconut oil, melted

3 eggs, whisked 

1/4 cup raisins or black currants

1 pear, thinly sliced 

1/4 cup almonds, sliced or crushed 

                                                                                                     

               - Combine almond flour, cinnamon, nutmeg, baking soda, and salt in a bowl.

- In a separate bowl, combine honey,  coconut oil, and eggs.

- Combine wet ingredients into dry.

- Stir in black currants and nuts.

- Pour the batter into a greased pie pan.. 

- Top with thinly sliced pears.

         - Bake at 350 for 40 minutes.

       - Let cool before serving.

TIP:
In the winter cold months, the coconut oil is solid. You can gently melt it on the stove top and let it cool to room temperature before using.
