Cinnamon Pear Cake

 

  • 2 cups almond flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon aluminum free baking soda
  • 1/2 teaspoon Celtic sea salt
  • 1/4 cup honey
  • 10 drops of stevia, optional
  • 1/3 cup coconut oil, melted
  • 3 organic eggs, whisked 
  • 1/4 cup black currants or raisins 
  • 1 pear, thinly sliced 
  • 1/4 cup almonds, crushed 

                                                                                                
- Combine almond flour, cinnamon, nutmeg, baking soda, and salt in a bowl.
- In a separate bowl, combine honey, stevia, coconut oil and eggs.
- Combine wet ingredients into dry.
- Stir in black currants and nuts.
- Pour the batter into a greased pie pan.. 
- Top with thinly sliced pears.
- Bake at 350 for 40 minutes.
