Red Cabbage Slaw 

 

1 small head of red cabbage, shredded

1 beet, peeled and grated 

2 carrots, peeled and grated 

1 apple, grated  

1/2 red onion, diced

1-inch ginger, peeled and minced 

1 bunch of cilantro, chopped  

1 jalapeno, seeded and diced 

Juice of 2 limes or lemons 

3 tablespoons olive oil 

1 teaspoon Celtic sea salt  


In a big mixing bowl, toss all the ingredients to combine. Taste for seasoning and adjust accordingly. Place in the fridge for a couple of hours before serving.
