Red Cabbage Slaw 

 

  • 1 small head red cabbage, shredded
  • 1 beet, peeled and grated 
  • 2 carrots, peeled and grated 
  • 1 apple, grated  
  • 1/2 red onion, diced
  • 1 inch ginger,peeled and minced 
  • 1 bunch cilantro, chopped  
  • 1 jalapeno, seeded and diced 
  • Juice of 2 limes or lemons 
  • 3 tablespoons olive oil 
  • 1 teaspoon Celtic sea salt  


In a big mixing bowl, toss all the ingredients to combine. Taste for seasoning and adjust accordingly. Place in the fridge for couple of hours before serving.
