Cucumber salad

2 cucumbers, grated

2 radishes, grated

1 small red onion, thinly sliced

1 garlic clove, minced

1 tablespoon rice vinegar

Juice of one lime

2 tablespoons olive oil

Celtic sea salt and black pepper to taste

- Combine all the ingredients in a salad bowl. Taste and adjust the seasoning to your liking.
