Marinated Red Onions
1 red onion, sliced thinly
1/4 cup red wine vinegar
2 tablespoons olive oil
1/2 teaspoon oregano
Black pepper and Celtic sea salt to taste
1 jalapeño, seeds removed and sliced (optional)
1 teaspoon raw honey (optional)
- In a glass bowl, combine all the ingredients together. Cover and let sit in your fridge at least for 2 hours before eating.
Great on top of a Greek salad, eggs and avocado toast....
