Nut Butter Granola

4 cups gluten free rolled or quick oats
1/2 cup nut butter (almond, peanut, cashew, hazelnut)
1/3 cup maple syrup or honey
1/4 cup ghee or coconut oil 
1 teaspoon vanilla extract
1/2  teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon Celtic sea salt 

Preheat oven to 325 F. Add oats to a parchment paper lined baking sheet. 
In a saucepan, over medium heat, combine nut butter, maple syrup, ghee, and vanilla, stir well. Pour the mixture over the oats, and add cinnamon, nutmeg and salt, stir well. Spread the mixture to an even layer. Bake for 30 minutes. Let cool completely before eating.

Enjoy with your choice of milk and fresh berries!
