Zucchini Fritters



 1 medium-sized zucchini, grated
1 egg, whisked 
1/4 teaspoon Celtic sea salt
1 pinch of black pepper
1/4 teaspoon ground cumin and turmeric 
2 tablespoons flour (I use cassava) 
1 tablespoon ground flax seeds
2 tablespoons olive oil

In a bowl, combine zucchini, egg, salt, cumin, turmeric, flour, and flax seeds.
Heat the oil in a large skillet over medium heat. Scoop 1 heaping tablespoon of the mixture into the skillet, flattening with a spatula,  and cook on each side for  2-3 minutes.
