Crockpot Mushroom Soup

1 can full-fat coconut milk

3 - 4 cups broth (I used chicken broth)

2 cups thinly sliced mixed mushrooms (fresh or frozen)

4 red skin potatoes, peeled and diced

2 carrots 🥕, peeled and diced

2 bay leaves

1/2 teaspoon thyme

1/2 teaspoon Herbamare

Black pepper and red pepper flakes to taste

Put all the ingredients in a crockpot and cook on low for 4 hours.

Tips: Serve over rice pasta.
