Banana Oatmeal Muffins

1 cup flour (I use all-purpose GF flour)

1/2 teaspoon baking soda 

1/4 teaspoon Celtic sea salt

1/2 teaspoon cinnamon 

2 eggs

1/3 coconut oil

1/2 teaspoon vanilla 

1/4 cup maple syrup

2 bananas, peeled

1 cup rolled oats

 

 

Preheat the oven to 350°F. 

Put flour, baking soda, salt, and cinnamon in a food processor and pulse for 1 minute.

Add eggs, oil, vanilla, maple syrup, and bananas. Pulse until well combined.  Fold in the oats and gently mix with a wooden fork.

Scoop batter into a paper-lined muffin pan.

Bake at 350 for 20 minutes. Let cool completely before eating.
