Elderberry Syrup 

1 cup dried elderberries
2 inches fresh ginger root, peeled and chopped 
1 teaspoon ground cinnamon 
1/4 teaspoon ground cloves
3 cups water  
1/3 cup honey

- Put elderberries, ginger, cinnamon, cloves and water in a pot and bring to boil. Turn the health down and simmer for 30 minutes.

 - Turn the heat off and let it cool to a room temperature.   Strain and discard the solids. Stir honey into the elderberry syrup and mix well.  
- Store in a glass container in the fridge.
