Cinnamon Mini Muffins  

  • 2 bananas
  • 4 eggs
  • 6 dates, pitted
  • 1 teaspoon pure vanilla extract
  • 1/3 cup coconut oil, melted
  • 1 tablespoon maple syrup 
  • 2 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • Pinch Celtic sea salt


- Preheat the oven to 350F.
- Put bananas, eggs, dates, vanilla, coconut oil and maples syrup in a food processor and pulse for 1 minute. 
- Add in almond flour, baking soda, cinnamon and sea salt and pulse until blended well.  
-Scoop batter into a paper lined mini muffin pan.
- Bake for 15 - 20 minutes.
- Let cool for 1 hour before serving.
