GF Oatmeal Cookies


  •  1 cup blanched almond flour 
  • 1 cup gluten free quick oats 
  • 1 pinch Celtic sea salt
  • 1/4 cup coconut oil, melted
  • 3 tablespoons maple syrup 
  • 5 drops stevia 
  • 2 tablespoons chia seeds 
  • 1 teaspoon pure vanilla extract
  • Berry jam 

- Preheat oven to 350 F.
- In a bowl, combine well almond flour, oats,salt,coconut oil, maple syrup, stevia, chia seeds and vanilla. 
- Using your hand, scoop up small balls and then place on a parchment lined cookie sheet, press a dent into each ball and fill with 1/2 teaspoon of jam. 
- Bake for 10 - 15 minutes. 

Add some crushed walnuts or cinnamon. 
If the batter is too dry add some more maple syrup or coconut oil or a splash of water.
