Fried Rice

 

  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1/2 cup carrots, diced
  • 1 cup broccoli, cut into small pieces 
  • 2 eggs, lightly beaten 
  • Tamari and toasted sesame oil to taste 


- Preheat large skillet to medium heat. Sauté onion, carrots and broccoli in olive oil until tender. 
- Slide onion, carrots and broccoli to the side and add the eggs. Using a wooden spoon, scramble the eggs. When eggs are cooked, mix the eggs with vegetables. Drizzle with tamari and sesame oil.
-Add the rice and stir and fry the rice and veggies until heated and well combined.
